Step 1: Preheat the oven to 200°C/400°F.
Step 2: Slice the eggplants into thin disks and place them in a baking tray lined with parchment paper.
Step 3: Peel the potatoes and cut into small cubes before adding to the baking tray. Slice the pepper into strips as well then add it to the tray.
Step 4: Add chopped tomatoes and mashed garlic cloves to the vegetables on the tray, along with a generous amount of olive oil and white wine vinegar. Sprinkle some salt on top for flavor and mix everything together lightly with your hands.
